INTRODUCING CHEF JULIO PETRUS, THE NEW EXECUTIVE CHEF OF BISMA EIGHT HOSPITALITY GROUP

Bisma Eight proudly welcomes Chef Julio Petrus as the new Executive Chef of the Bisma Eight Hospitality Group, overseeing a vibrant collection of culinary destinations including Copper Kitchen, Bar & Rooftop — Ubud’s original rooftop restaurant — along with Mori Teppanyaki, Embers Mediterranean, Folk Pool & Gardens, and Liap Liap. Renowned for seasonal, fire-driven cuisine and immersive dining experiences, Bisma Eight’s venues are entering an exciting new chapter of creativity, flavor, and innovation.

With over 13 years of culinary experience in luxury hotels and private dining, Chef Jo brings a refined yet soulful approach to modern Indonesian cuisine. Born in West Sumatra and shaped by his Batak and Minang roots, his dishes blend precision technique with warmth, story, and cultural depth.

Before joining Bisma Eight, Chef Jo held key culinary roles at Hilton Bali Resort and Marriott International and worked alongside Michelin-trained chefs across Southeast Asia and the Middle East. He is known for his thoughtful use of local, seasonal ingredients, wood-fired techniques, and beautifully layered presentations.

As Executive Chef of the Group, Chef Jo will lead a fresh culinary vision grounded in flavor, tradition, and innovation. From plant-forward dishes and charcoal-grilled specialties to intimate tasting menus and signature rooftop events, guests can expect new dining experiences that honor Bali’s vibrant landscape — all delivered with heartfelt hospitality.

Chef Julio’s appointment signals a fresh chapter for our culinary destinations — one that builds on Bisma Eight’s commitment to meaningful, experience-led dining in Ubud. Whether you’re staying at Bisma Eight or exploring Ubud’s vibrant food scene, now is the perfect time to rediscover our restaurants under bold new leadership.
