DRINK AND DINE AT BISMA EIGHT
The fare at our restaurants embodies our sensibilities about what makes a great meal. Being in the heartland of Balinese cuisine, we pay homage to the spices, ingredients, and tastes that define our home while creating dishes that cross borders and provide tastes of rustic, bright, daring, and sumptuous.

MORI TEPPANYAKI
Introducing Mori 森, a sanctuary of refined teppan cuisine, where the philosophy of balance, simplicity, and seasonality meets the lush serenity of Bali’s natural beauty. Inspired by the Japanese word for “forest", Mori invites guests to pause, breathe, and indulge in a culinary journey that delights all the senses.
CUISINE
Mori offers an exclusive 10-seater counter dinner, centered around meticulously curated seasonal tasting menus. The cuisine honors the innate essence of each ingredient, with a commitment to sustainable practices. Additionally, select proteins are procured from the finest purveyors in Japan, ensuring exceptional quality. On-site aging, pickling, and fermentation are integral to the process, with many ingredients coming from the family garden in the crisp air of Tegallalang.

EMBERS MEDITERRANEAN
These small details are the heart of the Mediterranean culinary world, where ingredients come together in a swirl of flavors. It’s cooking that takes subtlety skill, and years of practice, where chefs aspire to create bold dishes with simple, fresh ingredients. When you sit down to eat, you’re getting a meal that’s as comforting and rustic as it is light and daring.

At Embers, that Mediterranean tradition is at the soul of every meal we serve. Freshly harvested ingredients and produce are grown earth-to-table on our organic farm and paired with locally sourced meat and seafood.

COPPER KITCHEN, BAR & ROOFTOP
There’s a saying that goes something along the lines of ‘to understand the soul of a place, you must understand the soul of its food’. Copper was created in the culinary heart of Ubud to bring the legacy of Balinese cooking into a modern setting.
CUISINE
Every meal begins with our chefs using ingredients harvested locally, including produce from our very own Tegallalang organic farm. Our rich proteins and seafood are sourced from Balinese farms and fishermen. Our recipes are inspired by both the heritage of meals passed down over generations and also by the flow of contemporary cuisine; each dish arrives at your table with a soulful statement of what it means to cook in Ubud.
As you dine, enjoy a rich panorama of swaying jungles from Copper’s rooftop that’s as stunning at midday as it is under a blanket of late evening stars.
BEVERAGE
Our Beverage program is inspired by the thorough approach of the old world, using a combination of exotic ingredients and refined techniques of the past.
